Green Recipes for St. Patty's Day

The Junction Apartments, Menomonee Falls, WI  St. Patrick's Day is coming up on March 17th. What will you be eating to celebrate?

Welcome back to The Junction Apartments Blog! As we head into the month of March our minds turn towards St. Patrick’s day, arguably the “greenest” holiday of the year. To celebrate with the residents living in our Menomonee Falls, WI apartment community, we’re sharing a few green recipes to make the holiday celebrations all the more fun. Enjoy!


Avocado Cheesecake — You’re probably thinking “why?”, but trust us when we say this tastes great. For this recipe, you’ll need graham crackers, sugar, butter, salt, cream cheese, heavy cream, lime juice, lime zest, and avocados. It’s easy to put together and will fit right in on your St. Patrick’s Day dinner table.


Broccoli Pesto — For this refreshing recipe, you’ll need broccoli, basil leaves, olive oil, Parmesan cheese, almonds, garlic, and salt. Add in some grilled chicken or bacon bits and you’ll be set for a great meal! The bright side: it takes 10 minutes to prepare and make the delicious sauce!


Tropical Avocado Ice Cream — This probably shouldn’t taste good… but we can’t help but want to try it for ourselves. With nine ingredients — avocados, lime juice, lime zest, maple syrup, coconut cream, vanilla extract, coconut oil, salt, and lime slices — you too can make this interestingly tempting dessert.


Green Smoothie Bowl with Mango — Have you ever had a smoothie in a bowl? “Bowls make food taste better, really. Research suggests that the vessel in which we eat our food matters. And eating from a bowl suggests a more cozy, substantial, satiating experience. Which provides a healthier relationship with food, a fuller belly and reduction in overeating.”


Spinach Gnocchi with Shaved Ricotta Salata — Gnocchi is a classic dish that comes in a variety of styles. Made from things like wheat flour, potato, cheese, breadcrumbs, or similar ingredients, gnocchi is a fun dish with a lot of options. This recipe looks delicious (of course, why would we include it if it didn’t?).
